Tougher, Faster and Smarter, the Mirage Pro Takes Induction to the Next Level

 SHEBOYGAN, WI – February 10, 2011 – The Vollrath® Company, a leading manufacturer of quality smallwares and equipment for the foodservice industry, is launching the Mirage Pro (59500P) induction range with an array of innovative new features. Ideal for light commercial use, sautés and non-continuous small stockpot warming, Vollrath's Mirage Pro includes the company’s revolutionary G4 engine technology, which makes the unit more efficient and easy to control by providing chefs with the performance and dependability they need.  The G4 engine also increases the range’s overall durability, backed by Vollrath’s extended two-year warranty.

Vollrath developed its cutting-edge G4 engine by updating an internal induction range component called the IGBT switch, which is used to control power levels.  Most induction ranges use a single IGBT switch to power the entire unit, but the Mirage Pro G4 engine uses a total of four IGBTs. This upgraded engine power increases the Mirage Pro’s efficiency by lowering energy costs and providing faster cooking times. Also, Vollrath’s Mirage Pro has a temperature range from 80 to 450 degrees Fahrenheit; with the lower-end temperature of 80F, chefs can easily perform delicate tasks such as tempering chocolate. In addition, the unit offers 100 power level options allowing the chef to use precise temperature controls during food preparation and extending the lifespan of the cookware.

Featuring a sleek, low-profile case design, Vollrath’s Mirage Pro has a stainless steel case top with aluminum bottom and is 14 inches wide by 15 ¼ inches deep and three inches in height. Another element of the Mirage Pro’s stylish design is the new bright LED digital readout/ troubleshooting display, which makes it easy to set and clear. The enhanced digital display readout communicates helpful messages such as “ADD PAN” when the unit is ready for a pan; “BAD PAN” if the unit has an unusable pan, such as an aluminum one, placed on it; or if the unit is warm, it will read “HOT” on the display. Vollrath also offers a Mirage carrying case to allow for convenient transport of the unit, while protecting it from the elements.
